Fairly simple, and something I did as I was bored on Saturday morning.
Cooked a pack of mushroom Tortelli, drained and placed in a baking dish. I might use ravioli next time.
Mixed a small can of chopped tomatoes with black pepper, basil, dash of olive oil, a clove of chopped garlic and a little tomato puree. Poured this mixture onto the Tortelli then tore up a ball of mozzarella and scattered it on top.
Cooked in a hot oven for 20-25 minutes. Mmmmm, lovely.
Nothing particularly clever or special about it, but just a lot of my favourite things thrown together out of the cupboard.
