The miserable Monday night commute home in the rain one week before BST ends and dark nights draw in. Waiting for the bus my thoughts turned to sausage and mash, now that’s worth smiling about 🙂

Serves 2 Ready in 25 mins

500g of Potatoes, peeled & cut into chunks

6 Quality meaty Pork sausages (like Porkinsons)

4-6 tbsp of caramalised red onions (like from English Provender Co.)

150ml of beef or chicken stock (fresh or from cube or concentrate)



  1. Boil the potatoes until tender. Meanwhile, grill the sausages for about 10-15 minutes. Put the onions and stock in a pan and bring to a simmer.
  2. Mash the potatoes with a little butter and milk. Season and serve with the sausages and onion gravy.

How easy is that? 🙂

You could try and make a sweet potato mash for a change, and put some wholegrain mustard in the gravy. Or add some wholegrain mustard to the mash to tease the tastbuds. You could add a splash of red wine to the gravy, or cheddar cheese to the mash…….wow so many options, I could have this every night! and be the size of a double decker bus!
